Celery Root and Swiss Chard
Take 2 Russet potatoes and half a celery root (Celeriac). Cube them both and put them in a steamer. Once they are soft mash them together in a bowl. Chop up some swiss chard leaves and half an onion and cook them in a pan until onions just start to brown. Mix with mash along with pinch of salt, pepper, oregano and tablespoon of butter.
Celeriac is a good source of Calcium, Vitamin C and Vitamin B-6

Mushrooms and Spinach
Take 2 Russet potatoes, cube them and put them in a steamer. Steam until soft, put them in a bowl and mash. Chop up about 15-20 mushrooms of your choice, two big handfuls of spinach and 1 onion. Fry everything in a pan until the spinach has cooked down and is nice and soft. Add to your mash with a pinch of salt, pepper, chopped clove of garlic and tablespoon of butter.
Mushrooms, spinach and onions are just a perfect mix together. Spinach is another superfood that is packed with nutrients. This is one of the most delicious ways to get it in your system.
Celery Root and Butternut Squash
Take 1 Russet potato, half a celery root, half a butternut squash and half an onion. Cube all of the vegetables and put them in a steamer. Steam until soft. Mash together with pinch of salt, pepper, parsley flakes and a tablespoon of butter
The Butternut squah not only adds tons of flavour but has tons of vitamins and minerals. You will also be getting some fiber and protein from it too.
Cauliflower
Cube 2 Russet potatoes, 1 onion and half a head of cauliflower. Steam everything in a steamer until soft. Put everything in a bowl and mash. Add a pinch of salt, pepper, chopped clove of garlic, parsley, oregano and a tablespoon of butter.
This is probably one of the easiest versions to make but the results are awesome. Fast, delicious and nutritious. Feel free to change up the spices and add your own.

All these recipes can serve four people so its perfect for a family. It feels like you are eating mashed potatoes but the flavour is so much different then what you would expect. They all taste amazing and are super nutritious and that's what you should be aiming for either for your family or for yourself. Don't be afraid to play around with the ingredients, something leafy green with another root vegetable.
